Ingredients

Scale
  • 8 oz spaghetti or linguine
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. 1. Cook the pasta: In a large pot of salted boiling water, cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water, drain the rest, and set aside.
  2. 2. Sauté garlic: In a large skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  3. 3. Cook shrimp: Add shrimp to the skillet, season with salt and pepper, and cook for about 3 minutes on each side until pink and opaque.
  4. 4. Add lemon juice and broth: Pour in fresh lemon juice and chicken broth while scraping up bits from the pan. Simmer for 2 minutes.
  5. 5. Combine with pasta: Add cooked pasta to the skillet along with reserved pasta water as needed. Toss until well combined.
  6. 6. Serve: Transfer to plates and garnish with fresh parsley or additional lemon zest if desired.
