  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
  • 2 cans (4 oz each) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Dice the chicken breasts into bite-sized pieces. Heat olive oil in a large pot over medium heat and add the chicken. Cook until browned on all sides.
  2. Remove the chicken from the pot and set aside. In the same pot, sauté chopped onion and minced garlic until fragrant and translucent.
  3. Return the chicken to the pot along with white beans, green chilies, cumin, oregano, and chicken broth. Bring to a simmer.
  4. Reduce heat to low and let simmer uncovered for 20-25 minutes to meld flavors.
  5. Adjust seasoning with salt and pepper before serving.
