  • 1 medium head of cauliflower (about 500g), cut into florets
  • 2 cups (200g) sharp cheddar cheese, shredded
  • 1 cup (240ml) whole milk
  • 3 tbsp (42g) unsalted butter
  • 3 tbsp (24g) all-purpose flour
  • 1 tsp mustard powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil salted water in a large pot; add cauliflower florets and cook for about 5 minutes until slightly tender. Drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Whisk in flour and cook for two minutes until smooth.
  4. Gradually stir in milk while whisking continuously until thickened.
  5. Reduce heat, add cheddar cheese and mustard powder, stirring until melted and smooth.
  6. Combine the cauliflower with the cheese sauce, ensuring all florets are well coated.
  7. Transfer to a greased baking dish, topping with extra cheese if desired. Bake for 20 minutes or until golden brown.
