  • 4 boneless, skinless chicken breasts (about 1 lb), cubed
  • 4 cups cooked jasmine rice (preferably day-old)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 4 green onions, finely chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mirin
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. 1. Marinate the chicken: In a bowl, combine cubed chicken with soy sauce and mirin. Let sit for at least 10 minutes.
  2. 2. Cook the chicken: Heat 1 tbsp oil in a large skillet over medium-high heat. Add marinated chicken and cook until golden brown and fully cooked (about 5-7 minutes). Remove from skillet.
  3. 3. Sauté vegetables: In the same skillet, add another tablespoon of oil if needed. Sauté mixed vegetables for about 3-4 minutes until tender yet crisp.
  4. 4. Combine: Add cooked chicken back into the skillet along with rice and green onions. Stir-fry everything together for another 3-4 minutes until heated through.
  5. 5. Serve: Dish onto plates and drizzle with additional soy sauce if desired.
