  • 3 large cloves garlic, minced
  • 1 1/2 tablespoons rosemary, finely chopped
  • 2 tablespoons lemon juice (about 1 lemon)
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds boneless skinless chicken breasts, cut into 2-inch pieces
  • 2 onions, cut into 2-inch pieces
  • 3 bell peppers (red, yellow, orange or green), cut into 2-inch pieces

Instructions

  1. In a small bowl, mix garlic, rosemary, lemon juice, honey, Dijon mustard, olive oil, salt, and pepper until well combined.
  2. Place chicken pieces in a resealable plastic bag and pour marinade over the chicken. Seal the bag and refrigerate for at least 1 hour (overnight is best).
  3. Preheat grill to high heat.
  4. Thread marinated chicken and vegetable pieces alternately onto skewers.
  5. Grill kabobs for about 5–6 minutes on each side until fully cooked (internal temperature should reach 165°F).
