  • 1/2 cup chia seeds
  • 2 cups milk (dairy or plant-based)
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 cup nuts and seeds (your choice)
  • 1/4 cup coconut oil

Instructions

  1. In a bowl, mix chia seeds, milk, honey or maple syrup, and vanilla extract until well combined. Let sit for 5 minutes and stir again.
  2. Cover and refrigerate for at least 4 hours or overnight until thickened.
  3. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  4. In a large bowl, combine rolled oats, nuts and seeds, melted coconut oil, and additional sweetener if desired. Mix thoroughly.
  5. Spread the granola mixture onto the prepared baking sheet and bake for 20-25 minutes until golden brown, stirring halfway through.
  6. Once ready, layer chia pudding in bowls topped with homemade granola and fresh fruits.
